Simple Pineapple UpSide Down Cake from Quilt Ladies Kitchen
Pineapple Upside Down Cake
1 can crushed Pineapple, juice drained.
10-12 marchino cherries, cut in half, no juice
Spread pineapple and cherries in the bottom of the pan.
Served here with vanilla ice cream.

Grilled Pizza from The Quilt Ladies Kitchen
Grilled Pizza
This is so fun and easy to serve
2 packages of Pizza Crust mix I use our store brand (1 package per pizza)
(If you can make your own) Make as directed on package.
Spread out each crush on a grill cookie sheet. sprayed with vegetable oil.
Cook on grill at 350 for 10 minutes NO TOPPINGS on.
Do this early, if you do it early, cool, cover, put in frig, pull out when ready to use.
Time to eat, Add you favorite toppings,
if guests, chop things up and let them add.
Put back on hot grill 350- 400 F and cook for about 15-20 minutes , watch and get the cheese just right.

How to make Chicken Enchiladas with Quilt Ladies Kitchen
Chicken Enchiladas
I usually make this dish first thing in the morning, don't bake,
cover put in Frig. Pull out and bake

2 Cups Cooked Chicken
1 8 oz. Cream Cheese softened
1 Cup 8oz. Sour Cream
1 Cup Salsa, (I use hot) use what you like
8 Flour Tortillas 8inches
2 Cups Shredded Cheddar Cheese
1 Can 2.5 Sliced Black Olives drained
Cut up Tomatoes and Shredded Lettuce
Combine Chicken and Cream Cheese in a bowl
Spoon ¼ Cup of mixture into the center of each tortillas
Lay Seam down in a greased 9” x 13” pan
Mix Sour Cream, salsa and spread over the top of the tortillas
Bake at 350 F for 20 minutes uncovered
Sprinkle with Cheese and Olives
Bake for 10-15 minutes more
Serve with Lettuce and Tomatoes
4 Servings with Chips and Salsa

Recipe for an Onion Tart - Quilt Ladies Kitchen
Onion Tart
- 1 Large Onion, thinly sliced
- 8 Slices bacon, chopped ( I used 4 slices)
- 1 ready-to-use refrigerated pie crust, use one crust
- 1 pkg, (8oz) Philadelphia Cream Cheese, softened ( I used about 5-6 oz's)
- 1/4 cup sour cream (used greek yogurt)
- 1/2 cup shredded swiss cheese ( Optional, I don't add)
- .COOK onions and bacon in skillet for 10-12 minutes, until onions are tender, stir as they cook
- HEAT oven 400 F. unroll pie crust on baking sheet, mix cream cheese and sour cream. Spread on crust. Top with onion mixture. Leave a 2" border. Add cheese to top, (optional)
- Fold over edge, leaving the center open, fold crust as needed
- BAKE for 12-15 minutes - Cool a bit.

My First Quilt is Made of all Squares
In the early 80's we moved to Burlington, Iowa, it's in the southeastern corner of the state on the Mississippi River and yes, I learned how to spell Mississippi.

I had done some blocks, some pillows and then I saw in the paper a class being hosted by the local quilt group. I remember it being expensive and how I agonized over it for days. but, finally signed up.
The teacher was "Liz Porter" at the time she worked for one of the magazines, Better Homes maybe, but is was a wonderful day and I learned so much.
It was a color class which meant nothing to me at the time, looking at the quilt today I didn't get the whole idea. Liz brought letters to add to each quilt to identify, I used my initials.
Hand quilting was so relaxing to me, I had no frame, just a dining room table, pinned it very well and quilted. I checked out library books on how to do everything. The quality of books we have now is crazy different from then.
I was approached to join the quilt group after the class. I think I was a rarity in the group a "new" member. I remember being laughed at when they saw my round corners on the quilt. I love these corners.This is my quilt, I curl up under it daily, it's washed all the time and it's just over 35 years old. It's never looked better to me.

Fish Taco's Quilt Ladies Kitchen
When Husband brings home a recipe from work.....
Well, after he talked it up, way too much. I tried it.
Fish Taco's
1/2 Cup Greek Yogurt
1/2 cup light Mayonnaise
1/4 cup chopped Fresh cilantro
1 oz package of taco seasoning mix
1 pound Tilapia, or other firm fish cut in chucks
2 Tbs. olive oil
2 Tbs. of lemon juice, bottle or fresh
1 package whole grain taco shells.
Mix together, sour cream, mayonnaise, cilantro and 1 1/2 tablespoons of the seasoning in a small bowl.
Combine tilapia, olive oil, lemon juice and rest of seasoning mix,
Coat fish with seasoning
Cook, stir over medium heat for 4 to 5 minutes per side. or until fish flakes with fork.
Fill taco shells with fish mixture,
Top with, lettuce, tomatoes, sour cream mixture
Or as I like it. Salad, chips and fish.
